You will learn how to toast and grind north African spices to create your own ras-el-hanout spice mix and, depending on seasonal availability, produce dishes such as roasted baby aubergines, shakshuka (made with egg or aubergine), saffron couscous with chickpeas & lemon, heritage carrots with clementine & pomegranates and Moroccan spiced apple tart with almonds & date syrup.
Bring your own bottle to enjoy with the feast at the end of this spicy journey through traditional and contemporary Moroccan cuisine.

A tangy, sweet and spicy stew with caramelised onions, lemon, mustard and wonderful spices.

Jollof Quinoa
Learn the traditions of the popular West African Jollof, this time using healthy British grown quinoa as an alternative to rice
Banana Akara with Spiced Chocolate Sauce
Master this popular street food of banana fritters with an indulgent but non-traditional pairing of Lerato's signature spiced chocolate sauce using fairly traded West African Chocolate
