Join us in the kitchen for a culinary adventure as I share my secrets to cooking vibrant and sumptuous feasts inspired by cuisine from Africa and beyond, feasts you can easily recreate at home. This is suitable for all from beginners to enthusiasts, so don't be shy as everyone shines in my class.
You will learn how to toast and grind north African spices to create your own ras-el-hanout spice mix and, depending on seasonal availability, produce dishes such as roasted baby aubergines, shakshuka (made with egg or aubergine), saffron couscous with chickpeas & lemon, heritage carrots with clementine & pomegranates and Moroccan spiced apple tart with almonds & date syrup.
Bring your own bottle to enjoy with the feast at the end of this spicy journey through traditional and contemporary Moroccan cuisine.

I am excited to run this class with the Brighton & Hove Food Partnership, a non-profit organisation. Your support will help to promote their work to empower people to cook, eat a healthy diet, grow their own food and waste less.
I am inspired by my African upbringing, memories of wood fire stews, street-side roasted corn, ripe mangoes ready for plucking, sun-ripened tomatoes and many feasts shared with family, neighbours and new friends.
This togetherness is important in our culture and we will share this in our class. We will cook with a variety of seasonal produce, from Sussex grown to well-sourced African and Mediterranean ingredients.
